Easy Chicken Parmesan Cups Recipe

 Ingredients

  • 2 cups cooked chicken, shredded (rotisserie chicken works great)

  • 1 cup marinara sauce (store-bought or homemade)

  • 1 ½ cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 2 tbsp fresh basil, chopped (optional)

  • 24 wonton wrappers (or biscuit dough rounds)

  • 2 tbsp olive oil (for brushing)

  • ½ tsp garlic powder

  • ½ tsp Italian seasoning

  • Pinch of red pepper flakes (optional)

  • Salt and pepper to taste

 Instructions

Step 1: Prepare the Muffin Tin

  1. Preheat oven to 375°F (190°C).

  2. Lightly grease a 12-cup muffin tin with cooking spray or brush with olive oil.

  3. Press a wonton wrapper (or biscuit round) into each muffin cup to form a base.


Step 2: Make the Chicken Mixture

  1. In a mixing bowl, combine shredded chicken, marinara sauce, garlic powder, Italian seasoning, and a little salt and pepper.

  2. Mix until evenly coated.


Step 3: Assemble the Cups

  1. Spoon a little chicken mixture into each wonton cup.

  2. Sprinkle with mozzarella and Parmesan cheese.

  3. Add a second wonton wrapper on top (optional for double layers) and repeat with more chicken mixture and cheese.

  4. Brush edges lightly with olive oil for crispiness.


Step 4: Bake

  1. Bake in the oven for 18–20 minutes, or until the cups are golden brown and cheese is bubbling.

  2. Remove from oven and let cool slightly before removing from the muffin tin.


Step 5: Garnish & Serve

  1. Sprinkle with fresh basil and a little extra Parmesan before serving.

  2. Enjoy warm as appetizers, snacks, or a quick dinner with a side salad.

  • Extra cheesy: Add a small cube of mozzarella in the center for gooey, melty bites.

  • Crunch boost: Sprinkle breadcrumbs on top before baking.

  • Spicy kick: Add a dash of crushed red pepper flakes to the chicken mixture.
